		<description>The Mourvedre needed the acid the most with a pH of 4.02.  The Haut Tubee base was mostly Syrah this year.  The Harvest Moon itself was &#039;ok&#039; at 3.78.  Usually it&#039;s much higher after Malo in the 3.9 to 4.0 range.  I added enough to bring the Harvest Moon into a 3.7 range.  I did this as part of a blending plan.  The Cab Franc is high at 4.00, but since it&#039;s a small lot of just 2 barrels I didn&#039;t want to throw a ton of acid at it.  I&#039;ll treat the Harvest Moon and blend in the Cab Franc.  The end result should be right around 3.75 without having to add too much to either wine on its own.</description>
